Affiné was created in 2014 by NYC cheesemonger, Pamela Brewer. The name refers to the process - affinage - by which cheese is transformed from a pile of curds into the divine end product we know and love. Through our guided cheese tastings, we seek to enlighten hungry New Yorkers about the histories, processes, and passion that go into creating the world's finest cheeses.
